Samak Rice Kheer Recipe - Delicious and Nutritious Dessert

Samak Rice Kheer is a delicious dessert that is easy to prepare and perfect for any occasion. This kheer is a healthy and nutritious dessert option made with samak rice (also known as barnyard millet), milk, and sugar. Ingredients:

  • 1/2 cup Samak Rice (Barnyard Millet)
  • 4 cups milk
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 1 tbsp ghee
  • 10-12 cashew nuts
  • 10-12 raisins

Instructions:

  1. Rinse the samak rice and soak it in water for 30 minutes. Drain the water and set the rice aside. This step will help to soften the rice and make it easier to cook.
  2. In a heavy-bottomed pan, heat the ghee over medium heat. Add the cashews and raisins and sauté until the cashews turn golden brown. Remove the cashews and raisins from the pan and set them aside. These nuts and raisins will be used later to garnish the kheer.
  3. In the same pan, add the soaked samak rice and sauté for 2-3 minutes. This step will help to remove any excess water from the rice and also impart a nutty flavour to it.
  4. Add the milk to the pan and stir well. Let the milk come to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally. This step will help to cook the samak rice and make it tender.
  5. Add the sugar and cardamom powder to the pan and mix well. Let the kheer simmer for another 5-10 minutes until it thickens to a desired consistency. This step will help to sweeten the kheer and also add a lovely aroma to it.
  6. Add the cashews and raisins to the pan and mix well. These nuts and raisins will add a nice crunch and texture to the kheer.
  7. Turn off the heat and let the kheer cool to room temperature. Once cooled, transfer the kheer to a serving bowl and garnish it with some more cashews and raisins.
  8. Serve chilled or at room temperature. Samak Rice Kheer tastes best when served chilled, but you can also serve it at room temperature if you prefer.
