Malai Chicken Tikka is a popular Indian appetizer made with boneless chicken pieces marinated in a creamy mixture of yoghurt, cream, and a blend of aromatic spices. Here's how to make it:

Malai Chicken Tikka with chutney

Ingredients:

  • 500g boneless chicken, cut into cubes
  • 1/2 cup yoghurt
  • 1/4 cup cream
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp black pepper powder
  • Salt to taste
  • 2 tbsp oil
  • Skewers
  • Chaat masala (for garnish)
  • Lemon wedges (for garnish)

Instructions:

  1. In a bowl, mix together yoghurt, cream, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, red chilli powder, turmeric powder, black pepper powder, and salt to taste.
  2. Add the chicken cubes to the bowl and mix well, making sure that each piece is well coated with the marinade. Cover the bowl with cling film and refrigerate for at least 2 hours or overnight.
  3. Soak the skewers in water for 30 minutes to prevent them from burning while cooking.
  4. Preheat the oven to 200°C (400°F). Thread the marinated chicken cubes onto the skewers, leaving some space between each piece.
  5. Brush the chicken pieces with oil and place the skewers on a baking tray. Bake for 20-25 minutes or until the chicken is cooked through and slightly charred on the edges.
  6. Remove the skewers from the oven and sprinkle chaat masala over the chicken pieces. Serve hot with lemon wedges.

Note:

You can also cook the chicken on a grill or a barbecue for a smoky flavour. If you don't have an oven or a grill, you can cook the chicken on a non-stick pan or a griddle over medium-high heat until it is cooked through.
