Traditional Odiya Dalma Recipe: A Flavorful Vegetable Stew
Odiya Dalma is a delicious and nutritious vegetable stew that is popular in the Indian state of Odisha. This flavorful dish is made with lentils, vegetables, and a blend of spices. Here's how to make it:
INGREDIENTS:
- 1 cup split pigeon peas (toor dal)
- 2 cups water
- 1 potato, chopped
- 1 sweet potato, chopped
- 1 raw banana, chopped
- 1 drumstick, cut into 2-inch pieces
- 1 carrot, chopped
- 1 tomato, chopped
- 1 onion, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 2 tbsp oil
- Salt to taste
- Coriander leaves, chopped (for garnish)
INSTRUCTIONS:
- Wash the toor dal and soak it in water for 30 minutes.
- In a pressure cooker, add the soaked toor dal, water, turmeric powder, and salt. Cook for 3-4 whistles or until the dal is cooked well.
- In a separate pan, heat oil and add cumin seeds and mustard seeds. Once they start spluttering, add the chopped onions and sauté until they turn translucent.
- Add the chopped vegetables to the pan and mix well.
- Add red chili powder, coriander powder, and salt to taste. Mix well and cook for 5 minutes.
- Add the cooked toor dal to the pan and mix well. Add more water if required to adjust the consistency.
- Cook the dalma for 10-15 minutes on low heat or until the vegetables are cooked well and the flavors are well combined.
- Garnish with chopped coriander leaves and serve hot with steamed rice.
