Mumbai-Style Vada Pav Recipe: The Perfect Indian Burger

Ingredients for Vada:

  • 4-5 medium-sized potatoes, boiled and mashed
  • 1 tablespoon ginger-garlic paste
  • 2 green chillies, chopped
  • 1 tablespoon cumin seeds
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • 2 tablespoons oil for frying

Ingredients for Pav:

  • 2 cups all-purpose flour (maida)
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup lukewarm water
  • 2 tablespoons oil

Instructions for Vada:

  1. In a pan, heat oil and add cumin seeds and mustard seeds. Sauté for a minute.
  2. Add ginger-garlic paste and chopped green chillies and cook for a minute.
  3. Add mashed potatoes, turmeric powder, red chilli powder, and salt. Mix well.
  4. Add lemon juice and mix well. Turn off the heat and let the mixture cool.
  5. Once the mixture has cooled, shape it into small balls and flatten them slightly to form patties.
  6. Heat oil in a deep frying pan and fry the patties until they are golden brown on both sides.

Instructions for Pav:

  1. In a mixing bowl, add all-purpose flour, active dry yeast, sugar, and salt. Mix well.
  2. Add lukewarm water and oil and knead the dough until it is soft and pliable.
  3. Cover the dough and let it rest for 1-2 hours until it doubles in size.
  4. After 1-2 hours, knead the dough again for 2-3 minutes until it is smooth and elastic.
  5. Divide the dough into equal-sized balls and roll them into small discs.
  6. Place the discs on a baking sheet lined with parchment paper and let them rest for 15-20 minutes.
  7. Preheat the oven to 375°F (190°C) and bake the discs for 12-15 minutes until they are golden brown.

To assemble:

  • Cut the Pav in half and place a Vada in between the slices.
  • Add chutney and fried green chilies on top of the Vada.
  • Serve hot and enjoy!
