  • 1/4 teaspoon of cardamom powder
  • A pinch of saffron (optional)

Instructions:

  1. Wash, peel and grate the carrots using a fine grater. Set them aside.

  3. Add the grated carrots to the pan and stir well. Cook on medium heat for 30-40 minutes, stirring occasionally.
  4. After 30-40 minutes, the carrots should be cooked, and the milk should be mostly absorbed. Add the sugar to the pan and stir well.
  5. Cook on medium heat for another 15-20 minutes, stirring occasionally.
  6. Add the ghee to the pan and stir well. Cook on medium heat for another 15-20 minutes, stirring occasionally.
  7. Add the cardamom powder and saffron (if using) to the pan and stir well.
  8. Add the chopped nuts to the pan and mix well. Reserve some nuts for garnishing.
  9. Cook for another 5-10 minutes, stirring occasionally, until the ghee separates from the sides and the halwa is thick and glossy.
  10. Turn off the heat and let the halwa cool for a few minutes.
  11. Serve hot or cold, garnished with more chopped nuts if desired.

Tips:

  • Use full-fat milk for a creamier texture.
  • You can adjust the amount of sugar according to your taste.
