Perfect Gajar ka Halwa in Just a Few Simple Steps
Gajar ka halwa is a popular Indian dessert made with grated carrots, milk, sugar, and ghee. Ingredients:
- 1 kg of carrots, peeled and grated
- 1 litre of full-fat milk
- 1 cup of sugar (adjust according to your taste)
- 1/2 cup of ghee (clarified butter)
- 1/2 cup of chopped nuts (almonds, cashews, or pistachios)
- 1/4 teaspoon of cardamom powder
- A pinch of saffron (optional)
Instructions:
- Wash, peel and grate the carrots using a fine grater. Set them aside.
- In a large heavy-bottomed pan, heat the milk over medium heat until it comes to a boil.
- Add the grated carrots to the pan and stir well. Cook on medium heat for 30-40 minutes, stirring occasionally.
- After 30-40 minutes, the carrots should be cooked, and the milk should be mostly absorbed. Add the sugar to the pan and stir well.
- Cook on medium heat for another 15-20 minutes, stirring occasionally.
- Add the ghee to the pan and stir well. Cook on medium heat for another 15-20 minutes, stirring occasionally.
- Add the cardamom powder and saffron (if using) to the pan and stir well.
- Add the chopped nuts to the pan and mix well. Reserve some nuts for garnishing.
- Cook for another 5-10 minutes, stirring occasionally, until the ghee separates from the sides and the halwa is thick and glossy.
- Turn off the heat and let the halwa cool for a few minutes.
- Serve hot or cold, garnished with more chopped nuts if desired.
