Simple and Delicious Khichdi Recipe
Khichdi is a simple and healthy Indian dish made with rice and lentils. It is easy to make and can be customized with different spices and vegetables to suit your taste. Here is a step-by-step guide on how to make khichdi at home:
Ingredients:
- 1 cup basmati rice
- 1 cup moong dal (split green gram)
- 2 tablespoons ghee
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- Salt to taste
- Water, as required
Instructions:
- Rinse the rice and moong dal in water and soak them for 30 minutes.
- In a pressure cooker or a deep pot, heat the ghee on medium heat.
- Add the cumin seeds and mustard seeds to the ghee and let them sizzle for a few seconds.
- If using vegetables, add them to the pot and sauté for a few minutes until they are slightly soft.
- Add the turmeric powder and salt to the pot and mix well.
- Drain the water from the soaked rice and dal and add them to the pot.
- Add water to the pot, enough to cover the rice and dal by about 1 inch. The amount of water will depend on how soupy you want the khichdi to be.
- Stir the mixture well and bring it to a boil.
- If using a pressure cooker, cover the lid and cook on high heat for 2-3 whistles. If using a pot, cover the lid and cook on low heat for 20-25 minutes or until the rice and dal are soft and fully cooked.
- Once the khichdi is cooked, let it rest for 5-10 minutes before opening the lid.
- Fluff the khichdi with a fork and serve hot with a dollop of ghee on top.
Tips:
- You can use any type of lentils like moong dal, toor dal, or masoor dal to make khichdi.
- You can also add other spices like ginger, garlic, or garam masala for extra flavour.
- For a healthier version, you can use brown rice or quinoa instead of white rice.
- You can also add chopped vegetables like carrots, peas, or potatoes to the khichdi for more nutrition and flavour.
- If you don't have a pressure cooker, you can use a pot with a tight-fitting lid to cook the khichdi. Just make sure to keep an eye on it and stir occasionally to prevent it from sticking to the bottom.
