Simple and Delicious Khichdi Recipe

Khichdi is a simple and healthy Indian dish made with rice and lentils. It is easy to make and can be customized with different spices and vegetables to suit your taste. Here is a step-by-step guide on how to make khichdi at home:

Ingredients:

  • 1 cup basmati rice
  • 1 cup moong dal (split green gram)
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Water, as required
Optional: chopped vegetables like carrots, peas, or potatoes

Instructions:

  1. Rinse the rice and moong dal in water and soak them for 30 minutes.
  2. In a pressure cooker or a deep pot, heat the ghee on medium heat.
  3. Add the cumin seeds and mustard seeds to the ghee and let them sizzle for a few seconds.
  4. If using vegetables, add them to the pot and sauté for a few minutes until they are slightly soft.
  5. Add the turmeric powder and salt to the pot and mix well.
  6. Drain the water from the soaked rice and dal and add them to the pot.
  7. Add water to the pot, enough to cover the rice and dal by about 1 inch. The amount of water will depend on how soupy you want the khichdi to be.
  8. Stir the mixture well and bring it to a boil.
  9. If using a pressure cooker, cover the lid and cook on high heat for 2-3 whistles. If using a pot, cover the lid and cook on low heat for 20-25 minutes or until the rice and dal are soft and fully cooked.
  10. Once the khichdi is cooked, let it rest for 5-10 minutes before opening the lid.
  11. Fluff the khichdi with a fork and serve hot with a dollop of ghee on top.

Tips:

  • You can use any type of lentils like moong dal, toor dal, or masoor dal to make khichdi.
  • You can also add other spices like ginger, garlic, or garam masala for extra flavour.
  • For a healthier version, you can use brown rice or quinoa instead of white rice.
  • You can also add chopped vegetables like carrots, peas, or potatoes to the khichdi for more nutrition and flavour.
  • If you don't have a pressure cooker, you can use a pot with a tight-fitting lid to cook the khichdi. Just make sure to keep an eye on it and stir occasionally to prevent it from sticking to the bottom.
